First of all, I interviewed the driver and asked him if he enjoyed working at the lonchera? He said, ” I dont have a choice, but I like working with people”. Then, the approached to the owner and asked him, Do you plan to open a restaurant in future years? He said, I thought about it, but sometime I think of all the taxes, health inspection, and customers.”

The owner mentioned that it is easier for him to have his loncheras and he has a better control of the taxes.

He mentioned that he has

He might buy more loncheras instead of restaurants because he can be more active supervising his employees and checking the income the is coming in and out.
